Gluten allergic folks have no need to use flour on fast days. If truly following a low cal diet, carbs will be removed from the diet on fast days. Stick to leafy veg and lean protein on these days and you WILL be avoiding gluten. My husband has been gluten intolerant for years and has absolutely no trouble on fast days. In fact he eats many more vegetables now than he did 12 months ago. Another big plus for 5:2!
