FOR a delicious ~300 CALORIES: 2 cups of roasted spaghetti squash with 3 oz. small shrimp (I use pre-cooked frozen which I then season and bake in toaster oven); add a few roasted cherry tomatoes + 1 cup of torn fresh baby spinach leaves. Season with salt, pepper, oregano, pinch of parmesan. Microwave for about 1-2 minutes. ~225 calories! Add a 75 calorie fruit and you have a filling 300 calorie meal.
FOR a delicious ~200 CALORIES: 2 eggs over easy in a non-stick pan. Add to a few baked bean (or tortilla) chips with salsa and a pinch of shredded cheddar cheese. Pierce the eggs and mix together for a great, quick Huevos Rancheros.
The quick and easy Huevo Rancheros sounds delicious! Huevos Rancheros is one of my all time favorites, so good to have a 5:2 version!
