I have Mimi’s smaller Fast Cook book. The oven temperatures don’t mention whether it is for a standard oven or a fan.
Example – page 33, Smoked Haddock Gratin. It says 180 degrees, do I reduce this to 160 for my fan oven?
Modern recipe book writers tend to assume that everyone has a fan oven.
I do a lot of cooking and for cooking a gratin in a fan oven 180C sounds about right.

found a wonderfully liberating article on oven temperatures a while back Since then have relaxed a bit and used my own judgement ( and ovens do differ so anyway ) may I share?
