    I use 2 Tablespoons each of Parmesan cheese and Panko Breadcrumbs. I cook on wire rack in a 450F oven for 12-15minutes. My chicken is thin as I flatten it inside a small zip lock bag and then slit the bag open to remove the chicken nice even shape and thickness.

    Serve with wilted spinach, grilled tomato halves and a cup of homemade sauerkraut or kimchi. Total calories less than 325 calories (I think)

    Yes gluten free breadcrumbs are quite good actually. Just make sure they are fairly dry. There are recipes on the web for them.

    Also gluten free cornflakes crushed work as well.
