Diet days

  • I make a large pot of ratatouille for diet days using a tablespoon of rape seed oil, which is good for you. It has so few calories that it can be eaten on top of a slice of wholemeal toast 3 times a day.

    Frozen spinach, cooked in a microwave for 3 minutes is also an excellent snack. I love pepper and nutmeg and this makes it really tasty – with virtually no calories, but loads of goodness.
