The lady that explained it to you did not factor in the fact that one unit of body fat contains about 13% water. If you work the math then, it comes out to about 3555 calories. The problem is that there are no tools to measure the energy precisely, so it has been rounded down to 3500 for reasons no one seems to know.
The lack of precision in calorie numbers in both fats and other foods, not to mention the genetic differences in all people, is what makes weight loss so variable. It is also why depending exclusively on numbers generated by calculators and fitbit type things is often a mistake, and why it is necessary to compute the numbers at the start, but adjust when ‘you are doing everything right’ but still not experiencing the results you expect.
