    I am a huge fan of veggie-alternatives to carbs…

    Cauliflower rice is amazing – I go for the quick option and microwave it.

    You can also make cauliflower cous-cous in the same way…just blitz the cauliflower into smaller pieces!

    A chicken thigh with curry spices, served with cauliflower-rice…a delicious curry dinner on a fast day!

    Make cauliflower cous-cous and add a touch of turmeric, some garlic and onion and a touch of whatever spices take your fancy – a sprinkle of mint if you like…a great base for Moroccan meals – and with practically no calories!…I like to add a few chickpeas and one or two dried apricots cut up small…absolutely delicious! (Remember to count the extra calories you add!)

    If you haven’t already tried it, then look at veggie-pasta!….I love my spiralizer! Courgette gets whizzed through in next to no time and makes a scrummy base for a low-fat bolgnaise…..if you are a carbonara fan then you will know how calore/fat heavy this can be….BUT – spiralize a courgette and a carrot and microwave these, then top with a sauce made from 1/2 a small onion (dry fry if necessary, I like to use a spray of oil), a touch of garlic, a spoonful or two of low-fat joghurt a pinch of salt, LOADS of black pepper and one or two slices of extra thin siced ham cut into little bits….the sauce can be gently warmed and should not split as the joghurt is stable!….a divine ‘pasta’ dish for fast days!

    Mmmm Buttonboots – lots of really delicious sound ideas here!! You are making me hungry and I’m fasting today ha ha!!

    We have a spiraliser and are big fans of veggie pasta. I’d like to try the low-cal carbonara.

    Another good one is two spiralised beetroots, mixed with half a spiralised red onion (or just slice it if easier), handful of cherry toms, handful of black olives, splash of red wine vinegar and parsley. You bake it for 20 minutes with some halloumi – pretty good. That’s to serve 2. You can add some grilled chicken breast for extra protein.

    Your recipe ideas sound delicious and I’m adding a spiralizer to my shopping list. All of my favourite recipes are carb heavy so it’ll be fun to see what I can adapt with my new toy!

    MmeM — thank you for that. I’ve been reading masses of stuff over the last few weeks and that is an excellent examination of how prevailing nutritional beliefs screwed us up over the last 40 years. I completely bought into the low-fat thing, and I don’t know whether to be angry or sad about all the time I wasted beating myself up for failing. At least we have some better answers now.

    I know, right. My mother put me on a diet when I was about 10. Breakfast every morning was Coco Pops and skimmed milk. She still thinks in these terms.

    Mme Monkey, thank you for the link, a fascinating read. To think that we are told that we can trust nutritional information…I just checked the German Gesellschaft für Ernährung – the second of their 10 rules: eat lots of cereals and potatoes; rule five: little fat and fatty foods.
    And any institution that has to feed people (hospitals, schools, old people’s homes) plans their menus according to these guidelines.
    A shame.

    Very pleased to report that cauliflower rice was a big success. We had it with beef madras from the 5:2 book (which is more like a goulash than a curry, as it doesn’t have much fat in it, but very tasty nonetheless). It soaked up all the sauce and had a nice nutty texture. I stirred some chopped coriander through but you could definitely pep it up with all sorts of things. Might even try it on a non FD with a chicken curry or chilli.

    Weigh in day and very pleased to see that after my plateau last week I’m another kilo down, so 12kg gone in less than three months, and I’m pretty much where I wanted to be. Also at my lowest weight in about four years. Still a long way to go though.

    MMe thank you for the link – extremely interesting and informative! I’m glad the cauliflower rice was a success I’m hoping to give this a try soon. Hubby and I are embarking on eating low carb next two weeks while still fasting for two days a week to see what happens. Congratulations also on losing 2kg!!! That’s fantastic news well done!!

    Well it’s weigh in day for me also today and I’m glad to report I said ‘Adios’ to two more pounds this week! Glad to see the back of them! It’s a bit of a double milestone for me as it brings me down to 198lbs (14st 2lb) and under the 200s and I’ve also broke the barrier of my first stone loss – I’ve lost 1 stone and 1lb since I first weighed myself on 5th February so very pleased this morning! Hope you all have a lovely Friday!

    It’s just the 1kg loss for me this week, so 2lbs, like you. I need to make a new mini goal. I’d like to get down to where you are now – that’s about another stone away. Be good to get into Onederland, as the Americans say. That’s where I was for most of my 20s, before I met my husband and it all piled on.

    Congratulations, MmeM and Skyblue! It’s so encouraging to hear of people reaching goals and passing milestones. I’ve never heard the term Onederland before but I’m all for a visit whenever I can get there!

    I’ll be interested in your low-carb fortnight, Skyblue. I can see myself going further on that path as it seems to be really a good fit for me. It just seemed to happen naturally when I cut out the sugar that all other carbs lost their pull as well.

    I’ll be trying that cauliflower rice!

    Great news, everyone! It seems you are all very consistently “releasing” weight, very, very inspiring in those dark nighttimes of the soul.

    Onederland – I’m sorry, I don’t get it. What does it mean?

    Cauliflower rice – now, does it STILL taste like shredded cauliflower, or does a miracle happen and does it taste more like rice? To me, cauliflower has such a distinct cabbage-y taste that I just can’t imagine using it to replace rice.

    I’m another Onederlaner!….It is an amazing feeling!…I was actually topping the 300 pounds at my heaviest…I have lost over 100 pounds!

    Temptation is high here at the moment…I must be strong! Yesterday, a parcel arrived from the German Deli – Mum and I decided to order a few items that we can’t get here in the UK….I was very restrained! Some cream cheese, and one small spreading sausage (I went for my favourite – Teewurst, a smoky pork spreading sausage) and some jelly-sachets (Woodruff flavour, which you just can’t get in the UK – or not where I live!)…Mum included Harzerkaese amongst her choices – and I’m guessing I’ll be smelling that every time I visit for the next week or so!!!! …I will be strictly controlling my Teewurst consumption – one slice of bread planned for lunch tomorrow with a generous but not too thick spreading of the smoky deliciousness!

    Also, my brother has phoned and is coming to pay a visit today…wo Mum has baked a marble cake…and bless her, she has checked whether I am fasting today so she knows not to offer me a slice! (A slice will be reserved for me to enjoy later…just one slice!…it’s all about portion control!)

    Austrian: re cauliflower rice, no it didn’t taste very strongly of cauliflower. It didn’t really taste of anything, a bit like rice or cous cous. I like cauliflower anyway, so that taste doesn’t bother me.

    Woodruff flavour — Buttonboots, you took me back to the Berliner Weisses of my misspent youth! I envy you your Harzerkaese but your Teewurst is safe.

    Your weight loss is so remarkable, but what makes it even more encouraging is that the foods you love can still be enjoyed in moderation. This is real life stuff, not an artificial diet semi-existence.

    Really encouraging to hear of so many great losses this week BB, Mme and SkyBlue and thank you all for your thoughts on cauliflower rice. I didn’t get on with it myself but do like cauliflower roasted with various spices as it definitely peps it up its flavour.

    I haven’t had a good week myself – suffice to say back to reality with a big bump – feeling generally very sorry for myself – tummy not happy, shivers etc so probably coming down with something soon and combination of lack of sleep and being stressed at work not helping. Busy with family stuff as well and trying to make good food choices but in reality just want to curl up with a large choc bar and hot drinks.
    Reading your positive posts really helps me when I’m like this so will keep battling on and fingers crossed whatever this bug is wont last long. I’ve yet to hit Onederland but it sounds great.

    I’m TOTALLY behind in what’s been happening here and more than a little off my game.

    We had friends visiting the past week. Glad to have them and everything started out going well. I squired them to my favorite eateries and sipped my tea while they chowed down. Cooked favorite meals keeping them within my sensible parameters. And then… The husband had a heart attack. In. My. House. In (for them) a foreign country — with all those unfamiliarities and insurance complications. And the short week began stretching out into (god forgive me for being pissy at such a time) “The Man Who Came to Dinner” proportions. I LOVE them but, man!, we were looking forward to getting back to “normal”. …and so, I’m sure, were they.

    Happily, a couple stents corrected the problem and he will be in much better shape because he’ll get a good cardiologist at home and know what needs monitoring for the future. He’s beyond diligent about his health (LEAST likely candidate for a heart attack EVER!) and it took us all a much longer time to recognize what was happening than would ever be comfortable. But now he’ll know and stay on top of his arteries!

    Anyway, I got stressed out and began eating from dawn to dusk. And I wanted COMFORT FOODS. Understandable, perhaps, but, coming a week after the excesses of Easter, not a good time to go off the rails again.

    We’re off to a birthday party dinner tonight and then tomorrow I am going to have to muscle and white knuckle myself back on track. To. Stay. this time, I hope.

    Looking forward to catching up with all of you and being buoyed up by your good examples and stellar motivation!

    Oh my Gosh LA that’s terrible news. What a week you’ve had, fasting and sensible eating is way down your list of priorities right now – you’ve had a shocking week!! I do hope your husband is doing okay now.

    I need to loose 8 stones, i’m struggling a little bit because since i started the diet on 1 April 2016 i have been doing really well I’ve lost 5kgs, however i find that if i’m on a fast day over the weekend i find it really hard to stick to my Fast day, where as doing as fast day during the week seems a lot easier. Have you guys got any advice for me?

    LA> welcome back! Sounds awful – sorry you’ve been stressed. I took it to mean it was your friend’s husband who had the heart attack, not your own. It wasn’t totally clear. Whatever, hope things are improving now.

    sazlovesmonkeys> welcome! That’s a great loss in just a little over a week. Are you doing 5:2, or more regular fasts? If 5:2, just don’t fast on the weekend if you find it tough. Make it work for you. I keep mine to weekdays, and would struggle to do more than two a week, I think.

    OK, been reading posts as they come through my email but until tonight I have not had time in the last couple of weeks to put fingers to keyboard.

    LA, What an awful time you have had and how awful also for the friends with you, it must have been very scary all around. No wonder you took to your comfort zone, and who could blame you when we are all conditioned from babies to look for comfort in our times of stress.

    What is done is done and now you have a marker for the next stressful event (hopefully not as dramatic)so you can look back and see, do I want to do the same and fall back into that habit or can I CHOOSE a different form of comfort – a massage or facial or a good comedy are all good stress relievers. I say this in hindsight as well as the last couple of weeks have not been as easy due to stress and working from home.

    I have however released some fat cells, just not as much as I would have liked but a drop on the scales is a high five!

    Welcome to all the newbies here and there seem to be a few of you. Sazlovesmonkeys (slm for short) – notice how that spells slim you just have to put the I into it. LOL.
    If fasting on the weekend is too hard then don’t do it, especially in the beginning. 5 Kg is am amazing release in less than 2 weeks so well done! I find fasting days( which I am now going to call Cleansing days) much easier to do when I am at work as I never get a lunch break anyway. I do 2 or 3 a week depending on how many days I am working and don’t eat at all until I come home. On cleansing days I have a light dinner eg a salad, on the other days I have something a bit more substantial. We are all different in our methods and it is trial and error to see what works into your lifestyle.

    Everyone else, I have been cheering you on from the sidelines and toasted (with H2O) your successes.

    I am looking forward to trying the Cauliflower rice, I make cauli puree sometimes instead of potatoes and recently made what was supposed to be a low carb version of potato fritters (baked) but ended up being high fat and a lot of carb as I had to add so much flour to the mixture – not in the recipe, and shallow fry as they wouldn’t bake. I ended up throwing most of them out which was hard as I am on a strict budget and really cant afford to throw out good food. I had to pretend it was “off”.

    I do make a lovely Zucchini soup – I think some of you will call them courgettes?. It is more a puree but very tasty and freezes well. This is my winter standby.

    I will need to go over and re-read some of the posts.

    I release any excess fat cells that no longer serve me. Sweet dreams everyone.

    Thanks for the support, ladies, and I’m pleased to be trying to get back on track. Today is a fast day and this time it’s not coming easy but I’m committed to doing it.

    I’m glad to say it *wasn’t* *my* husband but, nevertheless, my friend — the wife — was a wreck and it was a huge shock to all of us. But, my friend — the husband — got to the hospital on time, got the stents to repair the compromised arteries and they are on their way home better, I hope, than they arrived. WHEW!!!

    speckles, can you share the zucchini soup recipe? I love soups. They’re so warming and comforting and that one sounds smart as well!

    Sazlovesmonkeys — welcome! The beauty of 5:2 is that you can figure out what works for you and adapt it to your needs. Many people, for example, choose Mondays and Thursdays for their fast days. Others prefer the weekend as it suits them better. You’ve made a fantastic start, and I wish you great success on your journey.

    It’s a fast day for me. 4:3 is working well and low carbs looks like a good fit. I’ve made a lot of discoveries in a short time about what suits my body. The weight is coming off and i couldn’t be happier. One of the biggest encouragements has been to see from you all that success is possible through different approaches.

    Several people have reported losing over 100 pounds, and many more than that are in 50 to 100 range. I have been doing it for over three years, although I experiment along the way and don’t try to do it when I travel. Several others on this site have also been following the way of eating for around 3 years (when it came out).

    Thank you all for your support, ok so the weight loss so far isn’t just due to the 5:2, I tend to go for a 30/45 minute walk on my lunch break and I do the gym during the week for an hour. I know that at some point the weight loss slows down so trying everything I can to keep going. Thank you for all your support and the best of luck to all of you? I do think so far this seems to be the most successful diet/life style choice!

    I have definitely spent my entire ‘working’ day today voraciously consuming everything on this site…so thank you! Another site I’m on (SparkPeople) has groups for IF, but they’re not active…leading me to believe I was late to a failed party. I hope not…I really have hope that this will work for me.

    Good luck with it. Like you I had a massive loss right at the start but then it slowed right down to 1 or sometimes 2lbs (0.5-1kg) a week. This is totally normal. Don’t get disheartened.

    Fast day today and it’s gone really well. Haven’t felt too hungry. Had a large portion of EAT spicy tomato and basil soup (164 cals) for lunch. Took me ages to eat and kept me full all afternoon. Dinner was an old standby of veggie omelette with a little sprinkling of cheese and dash of Tabasco.

    Right you are, Lolly! It’s a matter of getting right back in the groove and, once again, I’m *grateful* to have a couple FDs to come to my rescue!

    I can’t believe how my body responds to my fasts! Any other time in my life if I blew a diet day it would take me months and months to get sufficiently disgusted with myself to try a new diet. This is just a very productive rhythm I’m happy to go back to. Then food compulsions simply don’t have the opportunity to distort my life anymore. YAY!!!

    Mme I love omelettes as well. I often have one on a Cleansing day for dinner but I have mushroom with a small amount of grated cheese. Never tried veggies except for mushrooms.

    Zucchini Soup is very basic and very easy.

    I usually make a large batch but quantities are up to you.

    1 onion chopped roughly. Sweat onion is a large pan with a touch of oil then add any herbs you like- I use basil, parsley, coriander and Italian herbs as well as garlic paste. About I teaspoon of garlic and a tablespoon of the others.
    As I don’t have fresh herbs, I use the tubes that you keep in the fridge.

    Transfer to a large saucepan and add 1kg of roughly chopped zucchini and about 1 litre of beef stock – veggie stock works just as well.
    Bring to boil and simmer till Zucchinis are soft.

    Drain off and KEEP the stock leaving a little with the Zuc’s in the saucepan.

    I use a stick blender and give it a good wiz then return as much stock to the zucchini mix to make it a soupy mixture. Add a good dash of lemon juice.

    Save remaining stock for the next batch you make and I freeze it in a snap lock bag.

    The soup lasts a good 5 days but you can freeze portions as needed. Great to take for lunch to have a warm drink to keep you going.

    Doesn’t need cream or anything else, which I love as it really is very low calorie.

    Welcome to the forum Sazlovesmonkeys and DeepPurpleMoon you have come to the right place here with plenty of support and advice!. Sazlovesmonkeys I try do to a lot of walking to in my lunch hour and generally try to move a lot more during the day than I used to and I think its paying off!

    Lisa – hope you are feeling much better you do sound like you are coming down with something but I hope you don’t! Take care of yourself for a bit!

    Well today is day 4 of mine and hubbys low carb fortnight and so far so good! Not missing much really apart from my beloved cups of tea. I’m just having one cup in the morning with a splash of milk and the rest of the day is water, black coffee and green tea. We have swapped our fast days this week to Monday and Wednesday as we are out on Thursday night so fasted yesterday. I know I shouldn’t have but I couldn’t help myself and took a sneak peek at the scales this morning – I was 2lb down from Friday, so dead on 14 stone this morning. Not sure I will record this officially until Friday though! Hubby is stronger willed than me and said he is going to wait until Friday to weigh himself!

SB, I too sometimes “cheat” and weigh myself after one fast day rather than two hehe. It does feel quite naughty when I do! My fingers are crossed for you that next weigh in you’ll be in the 13’s!!!

    LA – my word, what a week you had (and what a fantastically written post – I was there with you!!). I’m so glad that it was all resolved OK. That even the fittest of us can suffer ill health is food for thought….Well done you for getting back to the fasting.

    Did you bake any low carb bread SB? I’d be interested to know how it turned out. Austrian, the flaxseed crackers sound great (and flaxseed is sooooo good for you). I don’t have a microwave so presume that I can bake, rather than microwave them?

    I LOVE cauliflower rice and actually prefer with a curry than rice now. The texture is great. Those of you with spiralisers, do you have basic hand held ones? I looked a while back and there are so many types and some just don’t seem to do the job. LOVE the idea of spiralising beetroot!

    Well I had a wonderful holiday. I allowed myself chocolate and ice cream whenever I wanted (pretty much every day!) and ate carbs too so was delighted to see that I’ve only gained 2lbs while I was away. So still under 14 1/2 stone. Really pleased as I know that I can release that again in no time and I’m back to fasting today, which I’m enjoying after all the over indulging. Although I’m not looking forward to having to go through the sugar withdrawal headache again.

    I read a book called Toxic Relief by Don Colbert while I was on holiday. He was advocating fasting back in 2001 before it became mainstream. It’s very repetitive in parts and he has a penchant for using very unnecessary and basic analogies, but it’s a really interesting read if you’re fasting for more than just weight loss. I bought it second hand on Amazon for less than 50p plus P & P. Anyway, some great ideas in there that I”m going to implement for health reasons one of which will be a 3 day juice fast in a couple of weeks (need to get my liver ready for it first apparently). I’m looking forward to it already!

    NG! You’re back!! So glad you’ve had a lovely holiday and only put on 2lbs – that’s amazing, you’ll lose that in no time at all!!

    I did try the ‘cloud’ or ‘oopsie’ bread as it is called and it wasn’t too bad at all, you can make it with just eggs, cream cheese and either baking powder or cream of tartar. I added a little psyllium husk too as that was what the recipe I had called for. We had a BLT sandwich with them on Sunday, hubby quite liked them. I also made some cauliflower hash browns at the weekend which were a big hit too they are:-

    1 small head of cauliflower grated or popped in processer and whizzed.
    3 eggs
    onion
    salt
    pepper

    Mix ingredients all together and leave to stand for about 10 minutes or so. Then fry them in oil or butter in a frying pan – you place the mixture in the pan and flatten carefully to make a round, I managed 3 in a pan at once and you can then keep them warm in the oven while you make some more. We had these plain and then the next batch we added curry powder, garam masala, cumin and green chillies and they were lovely! We had them with a dollop of greek yoghurt and butter!

    Thanks for the soup recipe, skyblue. I’m looking forward to trying it. I think I may try it with some goat cheese and perhaps some fresh tarragon as garnishes.

    As for tea, I drink a quart-size pot every morning. If you can get used to drinking it naked you’ll find lovely subtle herbal and grassy, sometimes floral, notes that were hiding under all the milk and sugar. I love tea both hot and cold and think all that extraneous stuff spoils it. I’m even trying to get a SCOBY started for komucha or fermented tea. It’s lovely in the summer and has lots of probiotics even if it’s made with sugar.

    LA…I love kombucha, but have never tried it at home…would love to hear how you do it! I’ve been thinking of trying fermented veggies at home…I love sauerkraut and kim chi…so great for digestion and keeps my heartburn at bay.

    Yesterday was my first successful fast…I’m really pleased and surprised at how not horrible it was…actually, it was kind of great. I did not miss the fullness and sluggishness I usually feel…I felt clean and free…if that makes any sense. I slept like a dream. I didn’t even wake up famished today like I thought I might. 🙂

    Today is my eat day, or whatever it’s called. I’m still tracking calories to make sure I don’t go nuts. But it’s weird…I have to keep reminding myself not to feel guilty for eating more today…this must be a mind shift those of us who are used to constant, strict calorie restriction have to go through…?

    Yes, DeepPurpleMoon! That’s just how I felt when I started. I even felt “taller” which is ridiculous because I’m only 5’1″ but I felt just buoyant after my first 2-day fast!

    It’s instructive to explore what “hungry” really means. And I think it’s empowering to get past it and make reasoned, unfettered choices because we don’t let “hunger” rule our lives.

    Congratulations on your first fast day, DeepPurpleMoon! I felt the same way after mine. I had to keep reminding myself that it was really okay to eat that much — even though “that much” was still well under my TDEE! Keep going and this process will change your life.

    NG, I love your attitude about being able to enjoy your holiday and come back to fasting as a normal thing. LA described perfectly the effect of “falling off a diet” which was my previous experience and then some. But this isn’t that kind of all or nothing plan — this works with real life.

    Thanks for the Kombucha link, LA…I’ll be looking into that. I’m in New Orleans, so cold tea is a necessity almost year-round. Even my Irish husband saw the light, once he’d spent a few summer months here.

    I’ve notice a few people mention that they have a cup of miso soup/broth on fast days to hold them until dinner. Is there anyone that could recommend a brand or type? Is it a powdered, just-add-hot water deal, or is it in a can…?

    I’ve also noticed that I’ve gathered LOTS of knowledge from previous diet efforts, and this is the one diet I’ve tried that I get to use all of them! The ‘good’ fats from Paleo, the ‘right’ carbs from Atkins, the weighing and measuring from calorie counting, the drinking plain, hot tea instead of snacking from…all of them, probably. And lots of water, which is the one and only health ‘tip’ I’ve managed to keep for 20 years. That stuff make fasting seem easier, whereas if I were starting as a total newbie to weight loss, I think this might be a bit harder.

    Still nervous this will be a balls-to-the-wall first week, then…nothing…like I’ve done so many other times. I’m cautiously optimistic at best.

    DeepPurpleMoon, I like the Edward & Sons Miso-Cup. It is instant — just add boiling water, and it’s not bad at all. I read a lot of reviews and then found it in a local vegetabel market.

    Yes! This is soooo my reaction too. But I think you will find that this is something you’ll be comfortable staying on because it’s very flexible and, however much trouble you get in at some point, a fast will straighten it right out and allow you to continue on.

    I’ve been doing it since Christmas and I now look forward to my fasts for the way they regulate my eating and my life AND they have kept me moving forward even after the excesses of the Easter holiday and then the nervous eating of a bad pinch coming right on its heels.

    Morning all…especially the newbies!

    I will stand well back from you all….this cold has gone all snuffly!…I though I had shrugged it off, but it lay dormant and snuck right back!…still I am muddling through!

    I like Miso…it is very ‘satisfying’…I will have to look out for the Edwards and Son brand.

    I also make my own hot drink…it’s not exactly a soup!….a mug of hot water, a scattering of dried veg flakes, pinch of black pepper, a dash garlic salt and a smidgin of smoked paprika and stir well!

    DeepPurpleMoon really glad to hear your fast day went well yesterday, and the good news is it gets even easier as time goes on! I used to have a cup of Bovril on fast days if I felt I needed it, these days though I find I can manage without and just have water/black coffee/green tea during the day.

    Lolly yes the hash browns were a big hit with us, we had them plain with a knob of butter on top but then put spices in the next batch to ‘spice’ them up a bit and they were good too. I think the options are endless!!

    Second fast of the week for me today and then I’m done for the week. Next week back to Tuesday and Thursday! Have a lovely day all!!

    Ooh also what I meant to say is you fry the hash browns for about five minutes on each side, if you try to turn them over to early they may fall apart a little but stay together if you give them time!!

    I’ve been making a pot of soup for my fast days, just stock to which I add veggies and tofu. I drink the stock through the day and have the solids at dinner time. It’s remarkably satisfying and I actually look forward to it.

    Ack, Buttonboots — those dragged out colds are a nuisance. Hugs from a safe distance!

    I am so excited to tell you — I dismissed another 4 lbs this week! This is really really working and I’m walking on air. 😀
