Is there a different in the nutrition values between whole wheat flour and white flour in a home made seitan?
and beside the low calories value, seitan has a good nutrition values?

I’m sorry you haven’t had any answers yatir, I had to look up what seitan is as I’d never heard of it, maybe it’s the same for others? Where I live in the UK we have a lot of vegetarian restaurants and I’ve never seen it on the menus, so possibly it’s not something we’ve caught on to over here yet. I can see it is high in protein but from what I’ve (briefly!) researched I can’t see other nutritional values there, but protein is good!
