  • This BAJA FISH TACO recipe is our FAVORITE (my husband and myself) go-to recipe for dinner on fast days! Very tasty and easy – no real cooking required. We use wild smoked salmon (smoke it ourselves as we are in the Pacific NW) but you could use any flaky firm fish, of course, then you need to cook/saute.

    SLAW RECIPE:

    Ingredients

2 cups fine-shredded green cabbage – I prefer the more festive purple.
    2 tsp lime juice
    1/2 tsp honey
    2 tbsp minced red onion
    2 tsp minced jalapeños
    2 tsp chopped cilantro
    Salt, to taste

Combine all ingredients in medium bowl – easy peasy!
Make at least 30 minutes ahead to allow some marination of flavors.

    TIPS:

Use any type of fish you prefer, 100 grams each serving = 117 calories or so. If you saute the fish, must use very minimal amount of oil. We use lots of hot sauce instead of oil. We use thin corn tortillas, (3) each = 120 calories. The following slaw recipe has approximately 45 calories, 3/4 Cup per person. I use about a teaspoon of salsa topping per taco = 15 calories. NO cheese necessary as the slaw, heaped on top, is quite zesty!

    Enjoy and keep fasting!
