    @goldensun I think I’ve fallen off the wagon with you.

    2nd post 107.1 kgs this morning. Love the spreadsheet @at. I know how good it feels to share the results as it does take a significant amount of work and time. Bravo and thank you.

    I am imagining pamie , Goldensun and myself all chasing after the wagon, hollering out Wait for us!!!! 😜😜😩😩☺. I am in such good company. And all the others are wriggling around making room and hands outstretched to pull us on board. I wish I could draw as I would put that sketch up on the pantry in the kitchen to really drive home what we are trying to achieve here and how much help there is if we only choose to use it.

    Fuvvie Pam et al I’m right beside you lying on the ground watching the wagon roll away in a cloud of dust without me.
    I fasted 22hours today and then ate my 450cals….then another approx 1050cals too….made worse by the fact that the entirety of those extra 1000cals was chocolate!
    I seem to be managing 20 + hours just fine but can’t manage a 500 or under this week.
    I think my faith in losing weight with IF has been shaken so much that it’s badly affecting my ability to stick with a full fast. I can’t seem to put myself through it when I’m not seeing any weight benefits.
    For 6+ months I’ve believed this will shift my weight but I’m really doubting and feeling quite lost as to what to do now.

    Thanks for the spreadsheet @at, I seem to have lost 100lb 😂😂 I think even that is far to small for me. You managed to do what I couldn’t and actually post the spreadsheet!!! Well done.

    Gonna do an extra FD today because I don’t want to lose momentum and have a few meals coming up at the end of the month.
    Yesterday I had omelette for lunch, broke my 2 day Fast and will say I couldn’t eat it all !!!!!, then in the evening I really wanted something sweet, so I have a pudding as dinner and throughly enjoyed it. That way it was a good NFD calorie wise.

    DAY 9 – UK – NFD

    FD went well yesterday (Thank you pocketeers!). Was going to do a b2b – but remembered I struggled last month – so will do ADF whenever I can. I will also remember to eat to my Tdee to-day, as I’m sure I didn’t eat enough last month on my nfd’s and that’s why my weight loss slowed so dramatically. It’s all an experiment, and trying every option to find what works best for you. Sugar cravings and headaches definitely reducing now, and even my sleep has improved….it just takes time for the body to adjust…have also bought several “sleepy teas” which I now have after 5.00 pm. (I only have decaf coffee now too). Some kind person on this site (sorry forgotten who, suggested Yoga – I am busy looking for a class – that should help with sleep also).

    Off on a 10 mile walk to-day. That definitely lifts the spirits. xx

    Day 9 – New Zealand – FD

    It’s been a struggle today, prob cause I’ve done a back to back. I feel like I have def gone over my calories for a fast day too. I don’t count my calories as I eat lchf but just really felt like having a binge. I don’t think I will do a back to back again but did it as I have a shared lunch tomorrow at work so couldn’t fast. No matter, I am not weighing until the end of the month so hopefully everything will even out. More good days than bad is what I’m banking on.

    That’s the trajectory I’m on (I’ll be around though, keep reading in my lunch break). Boy am I looking forward to Day 10! Yesterday’s NFD didn’t go too overboard until two substantial helpings of risotto (tis just too good!). Tonight is ladies’ night–I probably won’t drink (too much), but will bring my own vice, my old pals Ben and Jerry. So the FD is much needed on Friday and I am thinking of squeezing another one in there over the weekend. Maybe I’ll see what the scales are saying by then.

    Speaking of which: I cheekily went on there after not seeing any difference from 68.7kg after the last FD (I do almost every day for motivation in either direction but only record after FD/when it’s too good not to record), and came down with 68.2kg, yay! That’s exactly 3kg down from just over two weeks when I started on 20 Feb–I’d be very happy with losing that on a regular basis although I am settling into this WOL well enough to weather plateaus as well I think.

    Well I fended off the minicrisis about my desire for seconds of curry last night and successfully completed yesterday’s fast day. The delay and focus of posting here really helped, thankyou all. @sirisan that is a very good and useful mnemonic, a very good thing to share. Distraction is a brilliant technique. I use it to manage the pain of my fibromyalgia. It may well drive people around me a bit mad but I constantly wear headphones and listen to music to keep my focus outside my body away from the pain. To make the effect stronger I use songs in other languages so I really have to concentrate to understand them. Half of the debilitating effects caused by pain are from worrying about it, so if you pay no attention to it then its effects are immediately substantially reduced. I think this has helped me with fasting too as normally I just ignore my stomach too and focus on whatever I am doing. But when I do eat I change my focus and my stomach gets its voice heard so it is a weak point in my defence. But I didn’t give in. Every battle won makes us stronger.

    I have now been using IF for 4 months so I threw in an extra weigh in this morning. Despite the successful and hard won fast day yesterday my weight has gone up again:( I think my hormones are playing me up. I don’t seem to be going to have a period this month after several months having one every three weeks. Last year I went for six months without one. The menopause is toying with me:( Clearly my ovaries are another area of my body that need a good talking to! But no one ever said life was easy. Onwards… I can console myself with a bowl of sprout curry after I clean out all those ruddy rabbit hutches. That should take me up to about 1pm, quite a good time to break yesterday’s fast.

    My third fast day has begun with what feels like the beginning of an apocalypse in my mouth – I have one of my milk teeth left (which apparently is a source of a constant inflammation since the teeth around it are pushing in on where the tooth is supposed to be) and this morning, that tooth has been aching and the gum around it has been swollen and bleeding, so I had to change my plans and book an appointment to the dentist. I’ve been pushing back on starting the process of replacing the tooth with an implant, but I suppose my mouth decided that the time for that is now, hahah.

    Yesterday I was strangely hungry – my stomach was rumbling even while I was eating. Only dinner seemed to give me a temporary feeling of a full stomach, but I still got very hungry after it and thus ended up eating cherry tomatoes past midnight. I started to wonder if it’s because I’m not eating enough on NFDs or if it’s a side effect of the fasting. I generally hate counting calories so I haven’t done so on NFDs, but my assumption has been that what I’ve eaten should have been enough to fill my daily TDEE needs.

    Day 9 UK NFD yesterdays fast went relatively easily,gives me reassurance that as I approach maintenance 5:2 or 6:1 will definitely be a thing for life .

    A masterpiece AT. Thank you so much for your hard work and leadership. I have saved it to look back on. I loved reading the diverse goals.

    I don’t usually suffer on fast days, but went to bed hungry with a headache. Drank a large glass of water and spent the night up and down on the loo 😬 The positive from that is that the scales are down 1 1/2 lb. Saturday is my official weigh I. So the challenge is to keep that weight on the scales. Will extend the fast until tea time.

    Today is a good to be alive day. Cheerio for now!

    Day 9: Glasgow, Scotland. FD.
    Weight 10st 1lbs (started at 10st 3.5lbs – loss of 2.5lbs)

    Well, I’ve got to make up for Tuesday (my shameful ‘falling off the wagon day’ – don’t want to talk about it!). I carefully ate my full TDEE yesterday, and feel ready for FD today. I’m going out now for a 7 mile walk, and it’s a lovely day here (cold but bright – perfect walking weather). Weight loss is slow, but that’s OK. I think that at some point in the next few weeks I’ll see the scales edge down to 9st 13.9lbs – you’ll hear me cheer all over the world!

    Was in two minds whether to have a FD today or tomorrow but feeling positive today so might as well make the most of my mindset.

    Thanks @at for the explanation, I always skip brekkie on a FD but never thought of it in terms of hours, it’s a very helpful and positive way of looking at it. Thank you for all the hard work you must have put in with that spreadsheet!

    Hi AT and everybody 🖑☺ I’ve just joined the group and am so inspired by all your stories and heartened to know I’m not the ONLY one facing the challenges of losing weight. My weight 9 days ago was 83.4kg and 7 days later the scales were down by 2kg. I’m fasting every other day at the moment (a little boot camp … I know) and plan to gradually move towards the 5:2 WOL. Me and weight issues go back a loooong way and have got a looooot of history, but for the first time in my life I think I may have found something that is sustainable and doesn’t feel like a diet 😨😨 I’ve been sleeping better and to my complete amazement, have felt energised, wide awake and alert on my fast days when I was actually expecting to feel weak and lethargic. Very, very excited about this 🤗

    Day 9 Kent UK NFD goal 4 lbs plus target waist exercises.

    Positive fast day yesterday, 23-1 restored. I only allow myself food for 1 hour per day everyday. Rest of the day I drink tea and other drinks, mostly Kefir both water and milk and sparkling water. I have the occasional alcoholic drink on NFD’s but only one. I have been fasting since 2014 and adopted this plan last October. It gets hunger under control. Occasional lapses though when fed up, we are slaves to our emotions.

    I think the ‘key’ is to permanently replace carbs and sugary foods with healthy nutritious and tasty alternatives. Cutting out sugar will make cravings disappear and give our insulin resistance a chance to correct its normal balance. The body will begin to use the fat instead of store it. Read Jason Fung’s book The Obesity Code. He also recommends intermittent fasting. He has utube lectures if you prefer watching and listening to reading. I also think we should all keep active, walking daily as much or as far as we can. If we can’t change our mind about food choices and quantity consumed we will never change our bodies to get to that happy place where energy is not an issue.
    I wish you all good luck in your efforts to lose weight and get healthy. Set a weekly goal and achieve it.

    I am excited to have another FD.

    Day 9, New Zealand, NFD. Nicely ate TDEE with no problems. And did 12,000 steps too.

    Gosh – I really was surprised at how difficult I found yesterday’s FD, but managed to get through it although around 550 cals vs 500.

    So this week saw me fast Monday & Wednesday instead of Monday/Tuesday b2b and I found it more difficult. I then worked out that my usual b2b fast starting after dinner Sunday night and breaking with breakfast on Wednesday morning amounts to approx. 60 hours fasting period. However, two single days – starting after dinner one evening and extending to breakfast on the following day is a total of 72 hours. So that is a useful insight as to why intermittent fasting could be more effective than back to back. It may also explain why my hunger was worse on separate fasting days vs b2b.

    Also, given my current BMR and TDEE figures, 1230 & 1691, I’ve calculated that only 2 fast days per week is not going to deliver my weekly 1lb weight loss goal as I’m not cutting out 3500 calories/per week (which makes 1lb of fat). The good news is that I am losing weight in line with these figures – around 2/3rds of a lb per week.

    The result of my calculations tell me that in order for me to lose 1lb per week I need to fast 3 days out of 7 and not exceed TDEE on the other 4. The calculation goes like this:

    7 x TDEE @ 1691 calories = 11837 calories
    3 x fast days @ 500 calories = 1500 calories (a deficit of 3573 calories per week)

    So – 4 x 1691 = 6764 calories plus 3 x 500 (1500) = 8264 calories: my total calorie allowance for the week. 11837 minus 8264 = 3573 (1lb fat = 3500 cals).

    The moral of this story for me is to continue tracking my calorie intake very accurately and either accept a lower weekly weight loss with 2 fast days per week or increase to 3 fast days to achieve 1lb per week loss. Also I need to eat to full TDEE on non fast days to ensure that I don’t start a new fast day feeling more hungry than I need.

    To those of you who have stayed with me to the end of this mathematical ramble – thank you and I hope a) it makes sense and b) may help some strugglers work out why their weightloss is not going as well as expected.

    @at, Fabulous spreadsheet, you have the patience of a saint, keeping up with the global community posting from dawn ‘til dusk all at different stages of the day………..with the time differences we’re looking at 34+ hr days!!!! Well done!

    Oh, @Lany 36……. My heart goes out to you, my journey seems relatively pain free in comparison, I re-read my posts last week during a particularly bad wobble……focussing on my positive posts, reliving the joy at a 1lb loss, whilst consume vast quantities of tummy fooling water!! Maybe that would help you too? Is there any chance you could say sod this at 20hrs, have your 500cals and just go to bed?? It’s worked for me a couple of times, maybe a long bath or walk?? I don’t think you’ll be eating in the bath, or bed or walking…………….at least go for mindful eating, cutlery, crockery, at the table………….you’ll soon leave the chocolate where it is if you have to set the table!! I think you KNOW the benefits of this WOL, self sabotage is nothing new, we just need to ride that particular wave from time to time………don’t give up!!!!!! Perhaps, mix things up a bit, 6:1,5:2 a couple of liquid fasts, 16:8 etc, I find my body is super adaptable and after a couple of weeks it falls into a routine. I can’t allow it to get too comfortable so I throw a couple of curve balls in…….liquid only,b2b, ADF etc and it seems to work for me. I’m holding your hand, don’t you let me go!!!!

    @fatrabbit……….well done!! Nothing like discovering you DO have willpower, to encourage and inspire!!

    @monkeydo, I would suggest NO to force-feeding. If you can’t get to BMR let alone TDEE, don’t force it. Just be aware that your body may rebel and lead you towards a mega blow-out or stall your fat burning engine (plateau)………been there, done that!!!!

    @debster251 – delighted you and your husband enjoyed Ceroc. We went last night which helped me get through yesterday’s difficult fast day.
    @monkeydo – my limited knowledge of Basic Metabolic Rate tells me that if you regularly do not eat at least this level (fast days excepted) you are in danger of slowing down your metabolism which is then very, very difficult to reverse.
    @sirisan – thank you for STOP – very helpful and definitely appropriate.
    @fatrabbit – you’ve just demonstrated the power of our mutual support – congratulations on getting through your day.
    @emme1956 – I’m just about neck and neck with you and soooooo looking forward to breaking that 10st mark.     After yesterday’s mindless overeating probably due to a couple of glasses of wine – one before the film with the “girls” and one with dinner back home……..

    Anyway today is another day – again blue skies and sunshine here so feeling good and going for a CD a very controlled day aiming to below TDEE

    Thank you all for your lovely comments regarding the spreadsheet – I am a bit nerdy about things like that!!!!!! It was good to see that I had not really forgotten what to do since I retired and have not used one for the past 3+years!!!

    As @happymargo often says when struggling remember:-
    I am striving for “PROGRESS, NOT PERFECTION.”
    And before eating, I ask myself, “WILL THIS GET ME CLOSER TO MY GOALS?”

    It’s my youngest son’s birthday today. He’s 9, so we had his favourite meal for dinner (Domino’s pizza), and chocolate birthday cake. I had 2 pieces of pizza, and a small piece of cake (45g), and came in under TDEE.

    Morning everyone

    Just broke my fast with a bowl of porridge, probably the highest carb food I eat and only about once a week, but it really hit the spot.

    The scales are being kind today, although not official weigh in I do tend to indulge daily. I know some people find it demotivating to weigh daily and I show a gain as often as I show a loss. For me though it’s a great way to understand my body. I know if I eat something salty I will show a gain because of fluid retention, but that it will clear itself within a day. If I’ve gained it gives me the kick I need to be careful on a FD, and a loss is always good to see. I love to be able to see a trend, and can compare where I was the same day last week. I don’t get hung up on the daily weight, just concerned that the overall trend is going the right way.

    @at thanks very much for all your hard work. I love a good spreadsheet (I do know how sad I am).

    Done my half an hour on the exercise bike this morning.

    After yesterday’s FD, I weighed in this morning at 67.4 kg: that’s quite a bit up on last time but that’s how it works with me. I’ve just got to keep at it and the weight will, eventually, come down.

    It’s not even 6 am and I already “fell of the wagon”,had a terrible night (have been awake since 2:30 am). I’m not fasting today but I’ll keep all of you who are fasting, in my pocket. I’ll be thinking of you and eating mindfully. I’m already on the list for a FD tomorrow, today I’ll try to eat my tdee, not sure what my weight is right now but I haven’t even been close to my tdee so I doubt I’ve lost any weight, wish I could figure out how to add more healthy calories to my day!..

    Had a really good FD yesterday – it certainly helps to know all the pocketeers are going through the same especially with so many success stories this week. Good luck to all today!

    Ran a couple of miles this morning on waking as I had a parcel to collect but really struggled for energy after yesterday’s FD, legs felt like lead and had to stop a few times. Maybe yoga next time! Does anyone else have success with exercising on a FD or the morning after?

    @fatrabbit – sprout curry! Sounds lovely, I do love sprouts. Never realised that was a thing until I googled and there’s even a bbc recipe out there, one to try for the weekend with some cauli rice! And a big well done to you for staying strong last night and avoiding the 2nd helping. That is will power!!!!

    Ironic really yesterday because I ate more at the Spa than I normally would, however, I did do some ‘positive’ swimming rather than the floaty, don’t get your hair wet, breaststrokey type.

    Having friends over and cooking dinner, have planned a tex-mex spread that means that there will be lots of tasty, gluten-free options for me, too.
    Yesterday for salad dressing I made one that was tahini based, essentially (for 1 serving) 1 tsp tahini, 1 tsp water, juice of 1/4 or 1/2 lemon, a little cayenne pepper, s & p, and a tiny bit of garlic (if you like garlic, I do). It was very yummy and changed my salad a great deal – kept things interesting.

    Hi, I’ve just started and would love to join your March challenge if it is not too late. I’ve been eating healthy for a few days to get started so today is going to be my first fast day.
    I’m a 53 year old woman and have about 50 pounds to lose. This looks like a healthy way to do it and I’m so glad to have company.

    fd today my 2nd and last fast day of the week have been really good even on my nfd,s
    had late breakfast did not eat since 6.30pm last night(trying to get into the habit of not snacking after my supper)will have an apple about 3.00 then my supper about 6.00 plenty of water ,tea and coffee anything to fill me up.going to weigh my self tomorrow fingers crossed if i lose a £ i will be happy.will keep busy allday and will do my wondercore excersice this afternoon.

    Day 9……Florida…. NFD

    Today is a nice little day off mid week but it sure is going to be a busy one…. Mass at noon, to tux place for the kid, shoe shopping for 2 of my boys not even fun shoe shopping, dress shoe shopping for the boys who hate to shop, maybe I can be sneaky and get myself a couple pairs…. I’m a shoe hoarder, I love me some new shoes. I’m actually looking for some nice looking pointed toe boots with a marginal heal. Sorry, then off the the grocery store.

    It seems so odd, in one week, I’ll be on a plane headed for home…… looking forward to going but not looking forward to make that hard decision about my mom. She saw the doctor on Tues., he really broke it down for her. Yes, you will be on oxygen for long term, no you will never be able to drive again and no you will ever be able to live on your own again. My sister said she took it well but again the confusion she is having is taking an odd turn. She asked me yesterday, when I come down if I’ll do her hair because her mom is coming for a visit. Well, she actually said to me Grandma Effie, is coming. I asked her when she said, Grandma told her soon, but the thing is my Grandma was called home in 1980. Then to top it all off, he keeps asking my sister why she keeps coming into her room at night, apparently they have very nice conversations but my sister swears she doesn’t do that. We believe it my sister Janet who was called home 4 years ago because her and my sister Pat, the one that’s taking care of mom, look like twins even though they are two years apart in age. Rumor has it, that some people had trouble telling them apart when they were younger. I never had trouble but again, Janet raised me so I guess I knew the difference.

    Okay sorry, my mind is in an odd place right now. A little worried about this whole new world of aging parents.

    Today is an NFD, so going to see where I end up calorie wise at the end of the day.

    @bert1802, I feel for you, I’m still in the process of getting used to aging parents. My mother has Alzheimers (slow progressing thankfully) and my dad has dementia. It’s difficult for my mum to understand why my dad does the things he does and asks the questions he does. I however, have no problem holding a conversation with him about when he was a doctor (he wasn’t) or when am I taking him home (he is pretty much housebound) or responding when he asks “How are your parents?, you must send them my regards” …………….I can hold a conversation with ANY toddler talking gibberish with the correct inflection (Oh really, that happened at nursery!!!), so dementia isn’t much different, I just know contradicting and correcting only confuses and hurts them!

    Day 9 USA (Illinois) – FD

    So amazing that my weight can fluctuate by several pounds just by what must be water weight gain. Two days of popcorn with the cheesy salt but otherwise normal eating must have done it. I’m going to reset myself with a FD today. So Day 9 fasters, I am joining you.

    @at – that spreadsheet is amazing! What an incredible amount of work. Your time and dedication are much appreciated for the rest of us. We truly do need each other.

    @bert1802 – yes, aging parents is such an issue for so many people especially as families are more spread apart than we used to be. I feel for you in dealing with your mother, and I know you must be so glad her doctor has been brutally honest for her. Yet I am sure her confusion will be continue to be a problem for all of you. It just makes me wonder how my own family will deal with me as I age… hmm.

    While at my gym yesterday, I chatted with another retired teacher who will consider our WOL, so I am loaning her the “Fast Diet” Moseley and Spencer book. We all know exercise alone doesn’t do it, and it hasn’t for her as we all used to be at Curves before it closed. Curtailing calories is the way. She has about 50 pounds she would like to lose but knows it won’t happen overnight. I am also recommending this website as she knows how much you all have truly helped me.

    So happy to wake up and be below the 68kg mark. That was my goal for the week so it is brilliant to achieve it before my 2nd FD tomorrow. Plus my food shopping is definitely cheaper. I love this diet!

    @bert1802, I feel for you, I’m still in the process of getting used to aging parents. My mother has Alzheimers (slow progressing thankfully) and my dad has dementia. It’s difficult for my mum to understand why my dad does the things he does and asks the questions he does. I however, have no problem holding a conversation with him about when he was a doctor (he wasn’t) or when am I taking him home (he is pretty much housebound) or responding when he asks “How are your parents?, you must send them my regards” …………….I can hold a conversation with ANY toddler talking gibberish with the correct inflection (Oh really, that happened at nursery!!!), so dementia isn’t much different, I just know contradicting and correcting only confuses and hurts them!

    wow AT, that’s really amazing! You must have spent so much of your time compiling that spread sheet for us all so a massive thank you to you. My march goal is 10lbs but my over all goal us to be at 126 lbs. Just incase you were thinking I was being overly optimistic xx

    Thanks for the good wishes on the new baby girl, and yes – I was a young bride and young mother. Graduated from high school at 15, went to work for the stock market the next day, married a week before I turned 17, had my first child at 19, had four kids by the time I was 23. So glad I was able to have them so young and now I am enjoying second and third generations!

    Out for a day of shopping/eating with friends, gorgeous weather.

    I forgot to log in yesterday AND had a sloppy eating day. Perhaps it’s related? being accountable and logging in keeps me on track.

    AT: speaking of which…thank you for your effort into “our united health” with your spreadsheet. I always preach to my daughters, caring and love is about action. You acted and it’s appreciated. AND, I had a day like you yesterday of some mindless eating and I’m blaming it on the WINE, also. I mean it was me drinking that wine, but I have been mindful of just one glass once or twice a week. Period. Then all is well. But, when it’s pouring a little more in my glass after the first glass, then a topper — my eating goes south. Must be a correlation and lots of ladies here have attested to that. So, I shall be more mindful of just ONE glass occasionally and to sip it slowly.

    FATRABBIT: I can relate to you with the “M” word (menopause) knocking at your door. Mine still comes, too, but this month it decided not to, so it throws me off. Uggh. I a few months away from 50, not sure about you, but hang in there, sister. At least I’m not getting night sweats. It’s more of just salty cravings and a bloated belly and a bitchy person taking over my body until my hormones calm the hec down.

    Since my before-mentioned sloppy eating day on my dh’s birthday, I decided to do 2 B2B FD’s Friday & Saturday to make up for the FD i lost yesterday. I used my DH’s birthday as an excuse, but I think I could have easily stuck to a FD on his birthday and it would have been fine. I could have had a smaller dinner and skipped the wine and you know what???? I would have been happier today. So, lesson learned, indeed.

    We are having a long hard winter with endless snow (about 3-4 inches last night). Makes the desire to hibernate and/or eat very strong! My intention, even on a NFD, is to be aware and keep balance in the day. I teach a lot of yoga today, so that will help!

    2nd post

    I just had my long anticipated sprout curry and it was lovely. Well worth waiting for. Only I had too much and am now uncomfortably full and still have all the hutches I cleaned to rebed, because I left them to dry in the sun, which entails lugging a huge 20kg bale of chopped straw around and lots of bending which is not going to be pleasant on a full stomach. I really shouldn’t have had so much in the middle of the day. At least the days are longer so I can leave it an hour before I start and give it a chance to settle.

    Sprouts work amazingly well in curry because they soak up the spices. Here is my current recipe for @fayefaye and anyone else interested: Warning this makes a big pot full, reduce quantities if necessary. 1kg sprouts, 3 med onions, 2 chilis, 1 red pepper, 1 cauliflower, 2 bigish carrots, 2 tins of black beans, 3 tins of butter beans, 2 tins of coconut milk, 100g grated coconut, 1tbsp coriander seeds, 1 tsp cumin seeds, 1 tbsp fennel seeds, 1 tsp chili flakes, 1 tbsp ground coriander, 1 tbsp chili powder, 1tbsp ground cardamom, 1 tsp ground cumin, 1 tsp sea salt, olive oil or coconut oil to well cover the bottom of the pan, 100g ginger. Bunch of fresh coriander.

    Chop the ginger, fresh chilis and onion and cut up the cauliflower into chunks and the carrot into strips and peel the sprouts. Heat the oil with the seeds and chili flakes until they pop then add the onion, fresh chilis and ginger. Cook these down until the onion is soft and starting to caramelise then add the cauliflower, sprouts and carrots and mix to coat them with oil – enough oil is needed to enable this. Oil is not as bad as we were previously led to believe, at least not the good ones. Put the lid on and let it cook on a medium/low heat stirring fairly frequently to stop it sticking. If it is playing up add a little boiling water to left it steam a bit, but the frying effect improves the flavour so use as little water as possible at this stage. Once the veg is approaching tender add the chopped fresh coriander add the ground spices and salt and desicated stir well and let the veg finish cooking adding a little boiling water if necessary to prevent sticking. Once the veg is cooked add the coconut milk and desicated coconut plus a couple of tins of water and the beans and heat it all up well. Then resist seconds;) I make this at least once a week as long as there are fresh sprouts available.
