I was dancing around the kitchen like an idiot when I realised I could have Sos egg chips and peas for dinner.. on a fast day! So I had to share:
The only problem is that you have to go for vegetarian sausages… but the protein and richness from the soft warm yolk in a poached egg, more than makes up for it. (dripping all over the chips.. mmmmm)
200Kcal 125g Oven chips (the recommended portion size, the calory density of these varies a lot, so check before you buy)
~70Kcal 1 Poached egg
130Kcal 2 x Vegetarian Sausages
~80Kcal a 100g frozen garden peas.
The chips and sausages go on the same tray in the oven for the same amount of time. Boil the peas, and poach the egg (Poach it properly, not in the microwave, such a treat. I put a metal ladle in a pan of boiling water, break the egg into that, then tease it out after a minute or so once it can hold its shape… cook for about 3 minutes)
