Oatbran bread substitute ( adapted from Dukan)

  • 3 tablespoons of Oatbran
    1 level teaspoon baking powder
    1 egg, beaten
    1 tablespoon soft cheese such as quark
    Natural or Greek yoghurt
    Dried fruit eg acai or sultanas, or some fresh berries such as raspberries
    A tiny bit of sweetener such as stevia or sucralose.

    Put the dry ingredients in a bowl, mixing in the baking powder thoroughly. Add the egg, soft cheese and yogurt to the Oatbran mixture, softening with milk or water if too stiff. The texture should be similar to that of a sponge cake. When all is well mixed, put it in the container. I use a yoghurt tub.
    Cook in microwave for about ten minutes, then turn out. you can serve it with fruit ., cream cheese or similar.it should be risen and spongy

    Sorry, that cooking time is for the regular oven. In the microwave, cook for 4 minutes only. Use a shallow plastic container. I used the round container from a large Fage Greek yogurt.

    You get a spongy, pale ‘bread’. CUT IT IN HALF AND TOAST IT, or it is rather insipid.
