Just wondering if I can change my fast days from one week to the next to fit my lifestyle or should I stick to the same days every week?

As Simco says, it doesn’t make any difference to the results which days you decide to Fast. But it might make a difference to how easy you find it, and how sustainable it is for you.
Go for easy and sustainable!
When I began 5:2 I just looked ahead and decided which would be the two easiest to Fast for the week, depending what I had on for the week.
After a few months it settled down to be Monday or Tuesday for my first Fast, and Thursday or Friday for my second fast.
Then, due to a busy week, I fasted on a Sunday. I found I loved fasting on a quiet day at home, so now I fast Sunday and Thursday unless something leads me to changing days for the week.
Some people like to Fast back to back (two days in a row) and finds that works best.
You can play around with the days until you find what suits you!
