Sharing a recipe with you all. I made this when I was doing WW and it was only 1 pt per serving (240ml about 80 cals approx) You can add chilli’s or red pepper for different tastes. (chilli roughly extra 40 cals, red pepper roughly about 30cals per portion)
You will need:
2 garlic cloves chopped small
butternut squash
low cal spray
1 small red onion
veg stock (about 350-400ml) This will determine the thickness of the soup.
Spray 1 or 2 x low cal spray into pan. Fry off the onion and garlic ( chilli if including)until soft. Add the squash (red pepper if including) and veg stock until squash is tender. leave to cool and then blitz in a blender. Reheat when needed or freeze for easy use.
Easy to make and is very filling and brilliant for a low cal lunch on fast days.
