Butternut squash soup recipe.

  • Sharing a recipe with you all. I made this when I was doing WW and it was only 1 pt per serving (240ml about 80 cals approx) You can add chilli’s or red pepper for different tastes. (chilli roughly extra 40 cals, red pepper roughly about 30cals per portion)

    You will need:
    2 garlic cloves chopped small
    butternut squash
    low cal spray
    1 small red onion
    veg stock (about 350-400ml) This will determine the thickness of the soup.

    Spray 1 or 2 x low cal spray into pan. Fry off the onion and garlic ( chilli if including)until soft. Add the squash (red pepper if including) and veg stock until squash is tender. leave to cool and then blitz in a blender. Reheat when needed or freeze for easy use.

    Easy to make and is very filling and brilliant for a low cal lunch on fast days.

    Well I have just made my batch and calories are even less.
    Squash 82 cal
    2 cloves of garlic 8 cal
    Red onion 31 cals for 80g
    1 cal spray x2 is 2 cal or if you use flora cuisine it’s 42 cal.

    Mine today is 166 cal for the whole batch. Should get 3 meals which is about 56 cals per bowl.

    That’s great hmb, I’m using lentil soup this week on fasting days, will try your one next week, I will add the red chili so mine will not be as lean as your’s but still very good 🙂
