This actually turns out to be not too difficult. We generally go to different restaurants on the CR day for dinner. The first is a Shabu Shabu place. For those not familiar, Shabu Shabu means swishy-swishy in Japanese. You’re given a pot of boiling water and you dip ultra-thinly sliced meats and vegetables into the water which cook in 10 seconds. You dip in ponzu sauce and eat. At the end, you make a soup of whatever’s left over.
I get a strictly vegetarian dinner at the restaurant so my calories come from about 4 oz of tofu and a half cup of brown rice. But there’s a huge volume of vegetables — cabbage, spinach, broccoli, mushrooms, seaweed — all which have almost no calories.
The second restaurant has a raw vegetable crudities plate with hummus. Again, the veggies are almost calorie free and the hummus provides most of them. Very filling.
