Hi! I just recently returned to the forums and 5:2 and 4:3 after a very brief foray into the world of ketogenic purists (a bit scary there but great recipes, albeit a bit too high in fat for the most part!) So I promised in another post that I would share some of the better ones with my friends here.
For the recipes that I felt had a bit too high a fat content, I just lowered whatever ingredient had the highest percentage of fat, but that wouldn’t affect the taste too much, or substituted something a little leaner. I agree with the concept of low carb, and that plus IF is how I have lost all of my weight, but I think some of these people overdo it (so worried about peeing onto keto stix and blood glucose and such that they don’t simply look in the mirror or see how their clothes fit or listen to how their bodies feel.)
Anyhow, enough of that! On with the first recipe:
Cheddar Chorizo Meatballs
Ingredients
1-1/2 lbs ground beef
1-1/2 chorizo sausages
1 cup cheddar cheese, shredded
1 cup tomato sauce
1/3 cup crushed pork rinds (I personally omitted these)
2 large eggs
1 tsp cumin
1 tsp chili powder
1 tsp kosher salt (I used sea salt)
Instructions
Preheat oven to 350 degrees F
Break sausages into pieces small enough so they will mix well with ground beef. (I used food processor)
Add ground beef, ground pork rinds, eggs, and cheese to sausage.
Mix together well until you can form meatballs.
Roll meatballs and place on foil baking tray.
Bake 30-35 minutes or until cooked through.
Spoon tomato sauce over meatballs and serve.
Yields 24 meatballs (rolled medium size).
